THE OPPORTUNITY

Based at Royal Randwick Racecourse, a multi award winning venue has state of the art kitchens and premium restaurants hosting up to 300 people each and a function centre hosting up to 2000 people sit down or cocktail - It is host to some of the most prestigious events in Sydney.

The full-time role of Pastry Chef will be responsible for all pastry production and will be encouraged to utilise creative flair to produce spectacular desserts and pastries whilst receiving support and guidance to develop. You will also be involved in contributing new and innovative ideas for restaurant and event dessert menu development. You will have a team of casual chefs to assist you to work your magic.

This is a unique role in a commercial kitchen environment where no two days or menus are the same.

 

THE RIGHT FIT

  • Demonstrable experience working as a qualified Pastry Chef within a large, high end high kitchen producing 5 star quality dishes;
  • A flair and passion for food and the drive and motivation to go the extra mile;
  • Demonstrable experience with food costings and working with a budget;
  • A broad knowledge of patisserie ingredients and their characteristics;
  • Up to date knowledge of modern and creative cookery/presentation;
  • Strong organisational, planning and time management skills with the ability to prioritise conflicting deadlines whilst working under pressure;
  • Ability to provide hands on assistance and mentor with day to day training of junior team members;
  • Sound conflict resolution skills;
  • Exceptional attention to detail;
  • Relevant recognised training in Commercial Cookery and or Catering disciplinary;
  • Sound knowledge of food safety and HACCP principles;
  • Embody the ATC Values of Care, Collaborate, Own and Bold.
