THE OPPORTUNITY
Based at Rosehill Gardens and reporting to the Back of House Manager, accountabilities of the Back of House Supervisor include:
- Assist with the supervision of the BOH kitchen hands. Ensure that all kitchen, food receiving, preparation and storage areas including equipment and waste bins are clean and meet the standards of the ATC’s HACCP and food safety programs.
- Implement the Club's set procedure related to workplace Health & Safety, Emergency Procedures and ATC’s HACCP Safe Food Standards.
- Train staff on the job in effective cleaning techniques and safe handling of chemicals, and kitchen equipment.
- Monitor and take corrective action to reduce kitchen chemical and disposables misuse and energy waste, water, and power.
- Coordinate the safe handling, storage and distribution of kitchen chemicals and associated safety data sheets. All relevant and advised PPE is to be issued prior to use of kitchen chemicals. Daily management of the Earth-power Recycling System, including emptying and cleaning of bins used by the kitchen and stores areas.
- Working and maintaining the cleanliness of kitchens, fridges, freezer’s, loading docks & storage rooms including passageways and identifying improved methods of safe storage.
- Responsible for identifying potential risks to health and safety in the workplace, taking remedial action and make recommendations to improve workplace health and safety to the BOH Manager.
- Ensure the paper and soap dispensers throughout the BOH areas are filled and maintained with sufficient stocks.
- Complete administrative duties as required, such as but not limited to weekly T&A’s, rostering, purchase orders, receipting of purchase orders as directed
- In conjunction with the BOH Supervisor this role makes decisions concerning the rostering of Casual BOH Kitchen hands and for any changes in the manner in which those staff would complete routine tasks, although cleaning timetables are governed by Race Day and Function dates.
- Take all reasonable care for themself and others including complying with WHS instructions, policies, procedures, and legislation
- Always wear personal protective equipment (PPE) as required for the position
- Attend WHS training as required
- Identify and notify all safety incidents, injury, hazards, concerns, or unsafe behaviour to your manager
- Ensure all incidents, hazards, or injuries are recorded in ATC’s WHS management system (epar Connect) within 24 hours
THE RIGHT FIT
To be successful in the role, the right fit will possess:
- Proven experience in cleaning supervision within a large diverse catering environment
- Handling, storage and use of industrial chemicals.
- Working knowledge of relevant legislation, codes for cleaning and hygiene in a commercial kitchen and food preparation environment, e.g. HACCP.
- Strong organisational and time management skills to prioritise work and meet deadlines.
- Proven experience supervising and motivating kitchen hands.;
- Good analytical skills to identify maintenance problems or potential health & safety issues;
- Strong customer service and conflict resolution skills.
- Understanding of the financial impact on business for effective rostering of casual staff
- Experience delivering on the job training.
- Strong working knowledge and understanding of WH&S and HACCP policies with the ability to implement safe work practices;
- Strong working knowledge of all relevant ATC company policies, practices and the ATC employee handbook.
